Potato soup with BLT'S

Do any of you love Blt's? (bacon lettuce and tomato sandwich)We do! In fact Joe say's it's his favorite that is why he eats 2 sandwiches :) I know Blt's are a summer specialty because that is when tomatoes are in season. I like to make them all year long because they are easy! You can eat them all by there selves or like I did last night, serve with soup! Potato soup is another favorite of mine. I love potatoes and since I don't eat wheat I eat a lot of potatoes. The two actually go nicely together, although you can fill up on either one with out the other.
Some things we like to add to our blt's - sliced onion, salt and pepper, and Joe likes to add cheese.
Now, with the potato soup, you can puree it if you want.
If you want the Blt recipe because you haven't had the chance to try one (for some strange reason I'm sure) Let me know! It is simple- Bacon+lettuce+tomato on bread.
Unbelievably easy Potato soup
  • 1 large potato , per person
  • 1/4 cup chopped celery , per person
  • 1/4 cup chopped onion , per person
  • 1/4-1/2 cup milk or 1/4-1/2 cup half-and-half or 1/4-1/2 cup cream
  • salt and pepper , to taste

Directions:

    Peel and cube potatoes.

    Put in a saucepan along with the onions and celery.

    Add water, but don't quite cover the vegetables.

    Bring to a boil, lower heat, cover and simmer for 25 minutes, or until all of the vegetables are very tender.

    Using a potato masher, coarsely crush the potatoes, but don't mash them--you want chunks left.

    Add enough milk or cream to thin to desired thickness and add salt& pepper to taste.

    (It will take a lot of salt!). And you can add boulon if you have any, it gives it a nice flavor.
